Duck And Lentil Salad - cooking recipe
Ingredients

7 oz green lentils
4 tbsp olive oil
2 None small red onions, peeled, 1 chopped and 1 sliced
5.25 oz carrot, peeled and diced
1 None apple, peeled, cored and chopped
2-3 tbsp balsamic vinegar
5-6 sprigs fresh thyme, leaves picked, plus extra to garnish
1 tbsp honey
3.5 oz smoked duck breast, sliced
1/2 cup walnut halves, toasted
Preparation

Cook lentils according to package instructions. Drain.
Heat 1 tbsp oil in saucepan, add chopped onion and carrots and cook, stirring, for 2-3 mins. Add lentils then allow to cool slightly. Add 1/2 sliced onion along with apples, vinegar, thyme, 3 tbsp olive oil and honey. Season. Add duck breast and walnuts. Divide between 4 plates and garnish with extra thyme and remaining sliced onion.
