Zucchini Kebabs And Lamb Köfte - cooking recipe
Ingredients

250 g halloumi, cut into 24 pieces
3 small courgettes, sliced lengthways with a vegetable peeler
16 None soft dried apricots
8 rashers bacon, cut in half lengthways
1 None onion, peeled and finely chopped
2 None garlic cloves, peeled and finely chopped
1-2 None red chillies, deseeded and finely chopped
1 tsp runny honey
1/4 tsp grated nutmeg
1/2 tsp cinnamon
750 g lamb mince
None None 16 wooden skewers
None None 8 metal skewers
Preparation

Soak the wooden skewers for at least 1 hour. Place a piece of Halloumi at one end of a courgette slice, roll up and thread onto a metal skewer. Repeat, so that each metal skewer has 3 Halloumi rolls on it.
Wrap each apricot in a slice of bacon. Set aside.
Place the onion in a large bowl with the garlic, chili, honey, nutmeg, cinnamon and mince. Knead until smooth. Season with salt and freshly ground black pepper. Shape into 16 wide and slightly flattened sausage shapes. Thread onto the wooden skewers with a bacon wrapped apricot.
Grill or barbecue the skewers for 10-15 mins, turning occasionally, until cooked through.
