Bacon, Feta And Pesto Roll-Ups - cooking recipe
Ingredients

1/3 cup fresh basil leaves
1 clove garlic
2 tbsp Parmesan cheese, freshly grated
1 tbsp pine nuts, toasted
1/3 cup vegetable or olive oil
1 tbsp lemon juice

2 1/4 cups self-rising flour
1 tbsp granulated sugar
3 1/2 tbsp butter, chopped
3/4 cup milk
3 slices bacon, finely chopped
3.5 oz feta cheese, crumbled
1 oz Parmesan cheese, freshly grated
Preparation

To make the pesto, process basil, garlic, Parmesan and pine nuts in a food processor until finely chopped. With the motor running, gradually add oil and lemon juice until pesto is almost smooth. Set aside.
Preheat oven to 400\u00b0F. Grease and line a 12x8 inch rimmed baking tray with parchment paper.
Combine flour and sugar. Cut in butter until mixture resembles coarse breadcrumbs. Add milk and mix into a soft, sticky dough. Knead lightly on a floured surface until just smooth then roll out into a 16x12 inch rectangle.
Spread pesto over dough. Sprinkle with bacon, feta and Parmesan. Roll up tightly into a log then trim edges. Cut into 12 equal slices then place, cut-side up, on prepared pan. Bake for 25 mins, or until golden brown. Let cool for 5 mins. Serve warm.
