Rack Of Lamb With Feta And Olive Crust - cooking recipe

Ingredients
    1 None rack of lamb, bone-in (about 4 1/2 lbs)
    2 None onion, peeled and cut into wedges
    3-4 cloves garlic, peeled
    1 cup vegetable stock
    1/2 cup sour cream
    1/2 cup heavy cream
    1 tsp dried oregano
    1 tsp dried thyme
    3.5 oz pitted black olives, coarsely chopped
    7 oz feta cheese, crumbled
    5-6 tbsp oil
    2 1/2 lbs potatoes, peeled and chopped into wedges
    2 1/2 lbs green beans
    2 None shallots, peeled and chopped finely
Preparation
    Preheat the oven to 350\u00b0F. Put the lamb in a greased roasting pan and arrange the onions and half the garlic around it. Add the vegetable stock and roaste for 55-60 mins.
    Mix the sour cream, cream, remaining garlic, oregano and thyme. Season to taste and stir in the olives and feta cheese. 15 mins before the end of the roasting time, spread the mixture evenly over the lamb.
    Meanwhile, heat 3-4 tbsp of oil in a large frying pan and cook the potatoes over a medium heat, turning several times, for 20-25 mins. Season to taste. Cook the beans in boiling salted water for about 18 mins, then drain.
    Heat the remaining oil in a small saucepan and cook the shallots. Carve the lamb and serve with the fried potatoes, beans and shallots on a plate.
