Galettes With Bacon, Potatoes And Gruyère - cooking recipe

1 2/3 lbs potatoes, peeled
1/3 cup all-purpose flour
1/3 cup buckwheat flour
2 None eggs
4 strips smoked bacon, diced
1 None onion, peeled and finely chopped
3 sprigs fresh flat-leaf parsley, roughly chopped
3 sprigs fresh thyme, roughly chopped
3.5 oz Gruyere, grated
Preparation

Cook the potatoes in boiling salted water for 20 mins. Drain, rinse with cold water and dice. Cover and set aside.
In a bowl, beat the flour, buckwheat flour, eggs, 3/4 cup water and a pinch of salt into a smooth batter. Melt 1 tsp butter in a 10 inch diameter frying pan and pour in one-quarter of the batter. Cook until browned on both sides and remove from the pan. Repeat 3 times.
Add the bacon to the pan and fry until crispy. Add the potatoes and cook for 4 mins. Add the onion and cook for 3 mins. Season to taste and stir in the parsley and thyme. Add the cheese and heat until melted. Spoon over the pancakes and serve immediately.
