Cauliflower Fritters - cooking recipe

Ingredients
    1 lb cauliflower, cut into small florets
    2 slices bacon, chopped
    1/4 cup Parmesan cheese, grated
    1/4 cup self-rising flour
    1/4 cup breadcrumbs
    3 None eggs, lightly beaten
    1 clove garlic, minced
    1 tbsp fresh flat leaf parsley, chopped
    None None vegetable oil, to shallow-fry
    4 cups mixed greens, to serve
Preparation
    Cook cauliflower in boiling salted water for 3 mins, until tender. Drain and set aside to cool.
    Meanwhile, heat a small frying pan over high heat. Cook bacon for 2-3 mins, until lightly browned. Drain on paper towels. Combine with cauliflower, Parmesan, flour, breadcrumbs, eggs, garlic and parsley. Form into patties (around 1/4 cup each).
    Heat oil in a large frying pan over medium heat. Working in batches, cook patties for 2-3 mins per side, until golden and cooked through. Drain on paper towels. Serve with mixed greens.
