Christmas Cake Fruit Mix - cooking recipe
Ingredients

6 cups golden raisins
2 1/2 cups currants
2 1/4 cups raisins, chopped
1 1/2 cups pitted dates, chopped
1 1/2 cups prunes, chopped
1 1/2 cups glace cherries, quartered
1/2 cup dried apricots, chopped
1/2 cup crystallised ginger, chopped
1/2 cup candied mixed citrus peel
3 medium apples, peeled, cored and grated
2/3 cup fig jam
2 tbsp grated orange peel
1/2 cup orange juice
1 tbsp grated lemon peel
1/4 cup lemon juice
2 1/4 cups firmly packed brown sugar
1 tbsp mixed spice, such as pumpkin pie spice
1 1/4 cups Grand Marnier, rum or brandy
Preparation

Combine all ingredients in large bowl; mix well. Cover tightly. Store in a cool, dark place at least overnight or for up to a month, stirring occasionally.
Use this basic fruit mixture recipe to make one deep 9-inch round cake, one boiled pudding and about 48 fruit mince tarts.
