Crispy Salmon With Tomato Braised Green Beans - cooking recipe

Ingredients
    2 tbsp vegetable or olive oil
    1 None medium onion, finely chopped
    2 clove garlic, crushed
    2 None medium tomatoes, quartered
    2 14 oz cans diced tomatoes
    1 cup green beans, trimmed, cut into thirds diagonally
    10 None basil leaves
    4 None salmon fillets, about 5 oz, skin on, bones removed
    None None lemon wedges, to serve
Preparation
    Heat half the oil in a large pan over moderate heat. Add onion and garlic, and cook 2-3 minutes, or until soft. Add all of the tomatoes and simmer 3-4 minutes, or until thickened slightly.
    Stir in beans, simmer 3-4 minutes, or until beans are tender. Remove from heat. Season with salt and pepper and stir in basil.
    Meanwhile, heat remaining oil in a large pan over moderate heat. Add salmon, skin-side down. Cook for 4 minutes, or until skin is crisp and lightly golden. Turn, cook, 2-3 minutes for medium, or until cooked to your liking. Remove from heat. Cover with foil and rest, 5 minutes.
    Spoon braised beans onto serving plates. Top with salmon. Serve with lemon wedges.
