Watermelon Granita - cooking recipe

2 3/4 lb watermelon, rind removed, flesh coarsely chopped
1 cup cranberry juice
1/2 cup granulated sugar
2 tbsp fresh mint leaves, coarsely chopped + whole leaves, to serve
Preparation

In a food processor, process watermelon in batches until smooth. Add cranberry juice and sugar. Process until smooth. Strain and discard lumps. Add chopped mint. Transfer to an 8 inch square cake pan and freeze for 3 hours, or until just beginning to freeze.
Using a fork, flake mixture to break up ice crystals. Cover with plastic wrap then foil. Freeze for 4 hours, or until frozen.
To serve, flake mixture with a fork. Transfer to chilled serving glasses and garnish with whole mint leaves.
