Vegetable And Sausage Pasta - cooking recipe

Ingredients
    5 oz penne
    1 tbsp vegetable oil
    2 None thick pork sausages
    1 None red pepper, thinly sliced
    1 None Spanish onion, halved, sliced
    2 cloves garlic, minced
    1 (18 oz) can chunky-style vegetable soup
    1 tbsp chopped fresh flat leaf parsley
Preparation
    Cook pasta in boiling salted water for 10 mins, or until al dente. Drain then return to pan.
    Meanwhile, heat 1/2 tbsp oil in a frying pan over medium heat. Cook sausages for 10 mins, or until cooked through. Transfer to a cutting board and slice thickly diagonally. Add to pasta.
    Add remaining oil to frying pan and cook pepper, onion and garlic for 5 mins, or until soft. Stir in soup. Cook, stirring occasionally, for 4 mins, or until sauce reduces slightly. Add sauce to pasta mixture in pan and stir to combine. Season. Serve pasta sprinkled with parsley.
