Ingredients

1/4 cup olive oil
1 tbsp white balsamic vinegar
2 None ruby red grapefruits, segmented, any juice reserved
1 bulb fennel, trimmed, thinly sliced
2 stalks celery, thinly sliced
2/3 cup fresh flat-leaf parsley leaves
1/4 cup walnut halves, toasted
Preparation

Whisk together oil, vinegar and reserved grapefruit juice in a large serving bowl. Add remaining ingredients and toss to combine. Serve.
