Bean And Mushroom Fajitas - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None onion, finely chopped
    2 cloves garlic, minced
    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp cayenne pepper
    1 (15 oz) can baked beans in tomato sauce
    1 (13.5 oz) can 4 bean mix, drained
    1 tbsp tomato paste
    1 (13.5 oz) can tomatoes
    1 None pepper, seeded, chopped
    5 oz button mushrooms, chopped
    8 None tortillas, warmed
    None None mixed greens, shredded cheese and sour cream, to serve
Preparation
    Heat oil in a large deep frying pan over medium heat. Saute onion for 3-4 mins, until tender. Add garlic and spices. Cook for 1 min, until fragrant. Stir in beans and tomato paste. Cook, stirring, for 1 min. Add tomatoes, pepper and mushrooms. Bring to a boil then reduce heat to low and simmer for 8-10 mins, until thickened.
    Spoon bean mixture onto warm tortillas. Top with mixed greens and shredded cheese. Serve with sour cream.
