Curried Cauliflower Fritters - cooking recipe

Ingredients
    9 oz cauliflower, cut into small florets
    1/2 cup all-purpose flour
    1/2 cup whole wheat flour
    1 tsp baking powder
    1/4 tsp salt
    2 tsp mild curry powder
    2 None large eggs
    1 cup milk
    1 None long red chili, seeded and finely chopped
    2 None scallions, finely chopped
    1 tbsp canola oil
    None None 4 poppadums, microwaved, to serve
    None None Baby arugula, to serve
Preparation
    Cook the cauliflower in boiling water for 2-3 mins, or until just tender, then drain.
    Sift the flours, baking powder, salt and curry powder into a large bowl, adding the husks from the sieve. Make a well in the center. Whisk the eggs and milk in a separate bowl and add to the flour mixture, whisking until smooth. Stir in the cauliflower, chili and scallion.
    Heat 1 teaspoon of oil in a large frying pan over a moderate heat.
    To make each fritter, spoon 1/2 cup of mixture into the pan and flatten slightly. Cook for 1-2 mins each side, or until golden and crisp. Drain on paper towels. Add more oil and reheat the pan between batches when necessary.
    Serve the fritters with poppadums and baby rocket.
