Pancake Quesadillas With Guacamole - cooking recipe

Ingredients
    1 cup flour
    1/2 cup milk
    4 None medium eggs
    None pinch salt
    4 tbsp sunflower oil
    4 tbsp fresh parsley leaves, chopped
    4 None tomatoes, sliced
    4 None spring onions, trimmed and finely sliced
    1 None yellow pepper, deseeded and finely diced
    2 oz Monterey Jack cheese, grated
    2 None ripe avocados, stones removed
    None None juice of 1 lemon
    1 clove garlic, crushed
    1 None green chili, deseeded and finely chopped
Preparation
    Preheat the oven to 400\u00b0F. To make the pancakes, mix the flour, milk, eggs, and salt together into a batter. Heat the oil in a frying pan, add a quarter of the batter and shake the pan so that it spreads out. Sprinkle with parsley and flip after 2-3 mins when golden. Cook the other side for 1-2 mins until golden and repeat to make 4 pancakes. Place 2 pancakes on a baking sheet. Top with half of the tomatoes, spring onions, pepper and cheese then place a second pancake on top. Bake for 12-15 mins.
    Meanwhile, to make the guacamole, scoop the avocado into a bowl and mash with the lime juice, garlic and chili pepper and season to taste. Remove the pancakes from the oven and slice into wedges. Serve with the guacamole.
