Rich Chocolate Truffles - cooking recipe

Ingredients
    12 oz plain chocolate, broken into pieces
    12 tbsp unsalted butter
    1/2 cup organic cocoa powder to coat
Preparation
    Place the chocolate and butter in a heatproof bowl; place over a pan of simmering water. Stir until melted; remove from the heat. Chill until just firm.
    Place the cocoa powder on a large plate.
    Line a baking sheet with wax paper. Carefully take 1 tsp of chocolate mixture; roll into a ball between the palms of your hands.
    Immediately roll the ball in cocoa; place on the tray. Repeat with remaining mixture to make 36 truffles - work as quickly as you can to keep the mixture cool. Chill for up to 1 week. Layer between sheets of wax paper. Best eaten at room temperature.
