Chicken, Broccoli And Cauliflower Bake - cooking recipe

Ingredients
    1 None head broccoli, cut into florets
    1/2 None head cauliflower, cut into florets
    4 tbsp butter
    1/3 cup all purpose flour
    3 cups milk
    1 lb shredded cooked chicken
    1 1/4 cups cheddar cheese, shredded
    2 tbsp fresh breadcrumbs
    1/4 cup Parmesan, grated
    2 tsp lemon juice
    1 tsp finely grated lemon zest
    None None salad, to serve, if desired
Preparation
    Preheat oven to 350\u00b0F. Lightly grease 6 individual ovenproof dishes (or a 10 cup casserole dish).
    Cook broccoli and cauliflower in a large pot of boiling water for 4-5 mins or until just tender. Drain well.
    Meanwhile, melt butter in a large saucepan. Add flour. Cook, stirring, for 1 min. Remove from heat. Gradually blend in milk. Return to heat. Cook, stirring, until sauce boils and thickens. Simmer for 3 mins. Remove from heat.
    Stir vegetables, chicken and cheddar into the sauce and season to taste with salt and pepper. Spoon into prepared dishes.
    Combine remaining ingredients in a small bowl. Sprinkle over chicken mixture. Bake for 20-25 mins until golden and crisp. Serve with salad, if desired.
