Almond Meringue Cake - cooking recipe
Ingredients

3/4 cup ground almonds
3/4 cup granulated sugar + 3 tbsp
3 None egg whites
1/2 cup strong coffee
2 tbsp coffee liqueur
3/4 cup heavy cream
1 tbsp cornstarch
3 oz dark chocolate, coarsely chopped and melted
1/4 lb cream cheese
1 oz chocolate-covered coffee beans
1/4 cup blanched almonds

Preheat oven to 300\u00b0F. Mix ground almonds with 1 tbsp sugar, spread out onto a baking sheet lined with parchment paper and bake for 10 mins. Set aside to cool.
For dried meringues, decrease oven temperature to 200\u00b0F. Whip egg whites until stiff, sprinkling in 3/4 cup sugar. Fold in toasted almonds and distribute 8 blobs onto a baking sheet lined with parchment paper. Using a small spoon, make a small hole in each blob. Dry meringues for 2-2 1/2 hours.
For coffee cream, bring 2 tbsp sugar and coffee to a boil. Mix coffee liqueur, a little cream and cornstarch until smooth then chill until the mixture swells.
To finish, spread 1 tsp melted chocolate into and over each meringue. Mix cream cheese, remaining heavy cream, and chilled coffee cream then distribute between meringue holes. Serve sprinkled with coffee beans and almonds.
