German Potato And Plum Cake - cooking recipe

Ingredients
    400 g potatoes, peeled and chopped
    100 g butter
    200 g caster sugar + 4 tbsp
    5 medium eggs
    4 tsp baking powder
    200 g hazelnuts, chopped
    300 g prunes
Preparation
    Preheat oven to 350\u00b0F. Grease a 10 inch springform pan. Cook potatoes in boiling salted water for 20 mins then drain, mash into a smooth puree and set aside. Meanwhile, whisk together butter and 1 cup sugar until creamy. Stir in eggs, 1 at a time, then add mashed potato, baking powder and 1/2 the nuts. Transfer to the prepared pan and bake for 10 mins. Distribute prunes over top and sprinkle with remaining nuts and sugar. Return to oven for around 40 mins. Allow to cool in the cake pan for 10 mins before removing and letting cool completely on a wire rack.
