Pineapple-Braised Chicken - cooking recipe

3 1/3 lbs chicken, cut into pieces
2 tbsp sunflower oil
3/4 cup vegetable stock
1/4 lb raisins
1/4 lb almonds, chopped
1 None small pineapple, peeled and diced
1 None red onion, diced
None None cooked rice, to serve
Preparation

Season the chicken. Heat the oil in a Dutch oven over a medium heat, add the chicken and brown for 12-15 mins, turning. Pour in the stock, add the raisins and almonds, cover and simmer for 30-35 more mins. Mix in the pineapple and red onion, then re-cover and continue to cook for 35-40 mins. Season to taste and serve with rice.
