Stuffed Baby Potatoes - cooking recipe

Ingredients
    24 None small potatoes
    2 tbsp butter
    1 1/2 cups grated Cheddar cheese
    4 oz sliced ham, finely chopped
    1 tbsp coarse grain mustard
    1/4 cup sour cream
    2 tbsp sweet chili sauce
    2 tbsp chopped chives, plus additional, to garnish
Preparation
    Preheat the oven to 350\u00b0F. Line 2 large baking pans with parchment paper. Cook potatoes in a large saucepan of boiling water for 15 mins or until tender. Rinse under cold running water; drain well. Set aside to cool.
    Cut each potato in half lengthwise. Use a teaspoon to scoop out flesh leaving a shell. (Be careful not to break skin). Place potato shells on prepared pans. Place potato flesh in a large bowl with butter; mash until smooth. Add 3/4 cup of the cheese, ham, mustard, sour cream, sweet chili sauce and chives. Season with salt and pepper.
    Spoon potato mixture into shells; sprinkle with remaining cheese.
    Bake for 15 mins or until golden. Serve garnished with additional chives.
