Apricots With Spiced Ricotta - cooking recipe

4 None fresh apricots, halved, pitted
1/2 cup rolled oats
2 tbsp finely chopped dried apricots
1 tbsp brown sugar
1 tbsp honey
3 oz smooth reduced-fat ricotta cheese
1/4 tsp ground cinnamon
1 pinch ground cardamom
Preparation

Preheat oven to 400\u00b0F.
Place fresh apricots, cut-side up, on a baking tray. Combine oats, dried apricots, sugar, honey and 1 tbsp warm water then sprinkle over apricots. Bake for 15 mins, or until tender.
Meanwhile, combine cheese and spices in a small bowl. Serve fruit with spiced ricotta.
