Apricot And Pine Nut Biscotti - cooking recipe

Ingredients
    2 None eggs
    1 1/3 cups granulated sugar
    1 tsp vanilla extract
    1 2/3 cups all-purpose flour, sifted
    1/2 cup self-rising flour, sifted
    4 oz coarsely chopped glace apricots
    1/3 cup toasted pine nuts
Preparation
    Preheat oven to 350\u00b0F. Grease a baking tray.
    Whisk eggs, sugar and vanilla extract together. Stir in flour then fold in apricots, pine nuts and 2 tsp water until just combined. Transfer to a floured work surface and knead until smooth. Divide dough into 2 portions. Shape each portion into a 12 inch log. Arrange on prepared tray and bake for 25 mins. Let cool on tray for 10 mins.
    Reduce oven to 300\u00b0F.
    Using a serrated knife, cut logs diagonally into 1/3 inch-thick slices. Arrange slices, in a single layer, on ungreased baking trays. Bake for 25 mins, until dry and crisp, turning over halfway through cooking. Transfer to wire racks to cool.
