Zucchini And Apple Chutney - cooking recipe

Ingredients
    1 2/3 lbs zucchini, unpeeled, grated coarsely
    2 tbsp kosher salt
    2 None Granny Smith apples, peeled, cored and coarsely chopped
    2 medium onions, chopped coarsely
    1 cup golden raisins
    2 cups cider vinegar
    2 tsp brown mustard seeds
    1 tsp ground coriander
    1 cup granulated sugar
Preparation
    Place zucchini in medium non-metallic bowl. Sprinkle with salt, mix well. Cover and let stand for 2 hours.
    Rinse and drain zucchini mixture well. Squeeze excess water from zucchini. Drain on paper towels.
    Combine zucchini, apple, onion, raisins, vinegar and spices in medium saucepan on medium heat. Bring to a boil. Reduce heat to low; simmer, uncovered, stirring occasionally, about 20 mins or until mixture is pulpy. Add sugar; stir on high heat, without boiling, until sugar dissolves. Bring to a boil. Reduce heat to low; simmer, uncovered, stirring occasionally, about 15 mins or until relish is thick.
    Pour into hot sterilized jars and seal immediately. Store in a cool dry place. Once opened, store in the refrigerator.
