Sabayon With Poached Peaches - cooking recipe

Ingredients
    2 cups sugar
    1 None vanilla bean, split and seeds scraped
    1 None cinnamon stick
    4 None peaches
    None None Biscotti, to serve (optional)
    None None FOR THE SABAYON
    8 None egg yolks
    3/4 cup sugar
    1/2 cup Champagne or sweet white wine
Preparation
    Place 2 cups water, sugar, vanilla bean and cinnamon stick in a large saucepan on high heat. Bring to a boil, stirring.
    Add peaches. Reduce heat to low; simmer, without stirring, for 10-15 mins until just tender. Remove peaches and cool. Peel skin and discard.
    For the sabayon, place egg yolks, sugar and Champagne in a large heatproof bowl. Whisk until well combined. Place bowl over a pan of simmering water. Whisk mixture constantly for 8-10 mins, or until the sabayon has thickened and doubles in volume.
    Divide poached peaches among serving bowls. Top with sabayon. Serve with biscotti, if desired.
