1 lb sweet potatoes, peeled and cut into chunks
1 lb winter squash, (such as acorn or butternut) peeled and cut into wedges
1 None lime, zested and juiced
1 None large red chili pepper, deseeded and thinly sliced
3 tbsp olive oil
Preparation

Preheat oven to 375\u00b0F. Place the sweet potato and pumpkin in a roasting pan and sprinkle with the lime zest and chili pepper. Drizzle with lime juice and olive oil. Toss and season with salt and freshly ground black pepper. Roast about 40 mins, stirring halfway through, until golden and tender. Serve hot.
