Lobster Tails With Orange Butter Sauce - cooking recipe

Ingredients
    4 small lobster tails, halved lengthwise
    14 tbsp (1 3/4 sticks) butter, melted
    1/4 cup sherry vinegar
    4 None egg yolks
    2 tbsp orange juice
    None None Thinly sliced green onions, to serve
Preparation
    Preheat the oven to 350\u00b0F. Line a baking pan with foil.
    Place lobster tails, shell side down, on prepared pan. Brush lightly with 1 tbsp of the butter; season to taste. Bake 15-20 mins, until flesh is just cooked through.
    Meanwhile, place sherry vinegar in a small saucepan on high heat. Cook until reduced by half. Cool slightly.
    Combine yolks and cooled sherry in a medium heatproof bowl. Place over a saucepan of gently simmering water. Whisk vigorously 2-3 mins, until pale and fluffy.
    Add remaining butter in a thin, steady stream, whisking constantly, until sauce has thickened. Whisk in orange juice; season to taste.
    Spoon sauce over lobster to serve. Sprinkle with green onion.
