Sweet Potatoes With Meringue - cooking recipe

Ingredients
    4 None egg whites
    1 pinch cream of tartar
    3/4 cup sugar
    3 cups mashed, hot sweet potatoes (about 2 pounds uncooked)
    1 tbsp soft butter
    2 tbsp crystallized ginger, finely chopped
    1-2 tbsp orange juice
Preparation
    Preheat oven to 500\u00b0F.
    For the meringue, beat egg whites and cream of tartar at medium-high speed until soft peaks form. Combine sugar and a pinch of salt in a small bowl. Gradually add to egg whites, beating at high speed, until stiff peaks form.
    Combine sweet potatoes, butter, ginger and orange juice in a medium bowl. Transfer to a 2-quart baking dish and spread meringue over top. Bake for 3 mins, or until the meringue is golden. Serve immediately.
