Mediterranean Roast Vegetables - cooking recipe

3 1/3 lb desiree potatoes, peeled, cut into 1 inch chunks
2 tbsp olive oil
1 lb pearl onions, peeled
2 None zucchini, thickly sliced
1 bunch asparagus, ends trimmed
9 oz cherry tomatoes
Preparation

Preheat oven to 400\u00b0F. Heat a large baking dish in oven for 10 mins.
Toss potato chunks with oil. Add to heated baking dish and roast for 30 mins, turning after 15 mins.
Add onions and zucchini to dish. Bake for 25 mins. Add asparagus and tomatoes and bake for another 10 mins. Serve immediately.
