Oven-Baked Parmesan Chicken - cooking recipe

Ingredients
    2 None eggs, lightly beaten
    1 tbsp flour
    2 cups stale breadcrumbs
    1/3 cup grated Parmesan cheese
    2 tbsp finely chopped fresh flat-leaf parsley
    12 None chicken tenders
    1/2 cup olive oil
    1 cup firmly packed fresh basil leaves
    1/4 cup lemon juice
    1 clove garlic, quartered
    3/4 cup pitted kalamata olives
    8 oz mixed salad leaves
Preparation
    Preheat the oven to 425\u00b0F. Grease a baking pan.
    Combine eggs and flour in medium bowl. In another medium bowl, combine breadcrumbs, cheese and parsley. Coat chicken, one piece at a time, first in egg mixture, then in breadcrumb mixture. Place chicken, in single layer, on prepared pan.
    Bake for 15 mins, or until chicken is lightly browned and cooked through.
    Meanwhile, blend or process oil, basil, lemon juice and garlic until well combined.
    Toss olives and salad in a bowl. Arrange on serving plates with chicken. Drizzle with dressing.
