Bacon Wrapped Chicken With Goat Cheese - cooking recipe

4 None boneless skinless chicken breasts (about 6 oz each)
8 slices soft goat cheese
1 tsp chopped thyme, plus additional sprigs
1 tbsp coarse grain mustard
8 None thin slices bacon
Preparation

Preheat the oven to 400\u00b0F. Cut a deep pocket in each chicken breast. Stuff each with 2 goat cheese slices along with a sprinkling of thyme leaves. Season with salt and pepper.
Spread the mustard over the tops of the chicken. Wrap 2 bacon slices around each and secure in place with toothpicks. Place in a shallow baking dish. Tuck thyme sprigs around the chicken.
Bake for about 30 mins until the chicken is cooked through.
