Sausage And Vegetable Casserole - cooking recipe

Ingredients
    1 tbsp olive oil
    6 links sausage
    1 None onion, chopped
    2 cloves garlic, minced
    1 None zucchini, sliced
    1 None small eggplant, sliced
    1/2 None green pepper, deseeded, chopped
    1 (13.5 oz) can chopped tomatoes
    1 (13.5 oz) can lima beans, drained, rinsed
    3/4 cup canned sweet corn
    2 tbsp fresh basil leaves, torn, plus extra to garnish
    1/2 loaf slightly stale bread, torn
    2 oz Cheddar cheese, grated
Preparation
    Preheat oven to 350\u00b0F.
    Heat oil in a frying pan over high heat. Cook sausages for 4-5 mins, turning, until cooked through. Drain on paper towels then cut into chunks.
    Add onion and garlic to pan. Saute for 1-2 mins, until just tender. Add zucchini, eggplant and pepper. Cook, stirring, for 2-3 mins. Transfer to a large baking dish along with sausage, tomatoes, beans, corn and basil. Season. Sprinkle with breadcrumbs and cheese. Bake for 25-30 mins, until cheese is golden. Garnish with basil leaves.
