Pork Involtini With Lemon Sauce - cooking recipe

13.25 oz boneless pork loin, sliced thinly
1/2 None red pepper, seeded, sliced
2/3 cup Cheddar cheese, grated
1/4 cup fresh parsley leaves, plus extra to serve
1/4 cup seasoned flour
2 tbsp olive oil
2 cloves garlic, finely chopped
3 tsp capers, rinsed
1/2 cup white wine
2/3 cup heavy cream
1 None lemon, zested and juiced
Preparation

Preheat oven to 350\u00b0F. Line a baking tray with parchment paper.
Top each piece of pork with 2 slices pepper, 1 tbsp cheese and a few parsley leaves. Roll up and secure with toothpicks. Dust pork rolls with flour.
Heat olive oil in a frying pan over high heat. Saute pork rolls for 6-8 mins, turning, until golden. Transfer to prepared tray and bake for 4-5 mins, until cooked through.
Add garlic and capers to frying pan. Cook over medium heat for 2-3 mins. Add wine and cook, stirring, for 1 min. Add cream, lemon zest and 2 tbsp lemon juice. Simmer for 3-4 mins, until slightly thickened.
Spoon sauce over pork. Garnish with extra parsley leaves.
