Greek Cabbage Salad - cooking recipe

Ingredients
    2 1/4 lb white cabbage, trimmed and shredded
    7 oz carrots, peeled and coarsely grated
    1 bunch spring onions, trimmed and shredded, 1 reserved for garnish
    4 tbsp olive oil
    6 tbsp white wine vinegar
    1/4 tsp sugar
    1/3 cup raisins
    1/3 cup pine nuts, toasted
    3 oz black olives
    None None lemon wedges, to serve
Preparation
    Toss cabbage with 1 tsp salt and set aside for 10 mins. Add carrots and spring onions. Whisk oil, vinegar and sugar and season then toss with cabbage mixture. Add raisins, pine nuts and olives. Serve on a platter with lemon wedges and reserved spring onion.
