Amarettini - cooking recipe

Ingredients
    400 g icing sugar + some for dusting
    450 g finely ground almonds
    4 medium egg whites
    4 tsp almond extract
    4 tbsp brown sugar
Preparation
    Mix the powdered sugar in a bowl with the almonds, egg whites and almond extract. With wet hands, shape into about 80 balls and place on lined baking sheets, rolling half the balls in brown sugar. Let dry in a cool place for several hours, preferably overnight, then bake on the bottom rack of a preheated oven at 350\u00b0F for about 20 mins. Cool on the tray and dust the non-sugared cookies with powdered sugar.
