Baby Beet Salad - cooking recipe

Ingredients
    2 lbs whole baby beets, rinsed
    3/4 cup bean sprouts
    1 medium carrot, peeled and thinly sliced
    1 None celery stick, trimmed and thinly sliced
    1 small red onion, thinly sliced
    1/2 cup loosely packed fresh mint leaves
    None None FOR THE DRESING
    1 tbsp finely grated lime peel
    1/4 cup lime juice
    2 tbsp olive oil
Preparation
    Boil, steam or roast beets until tender. Cool slightly. Peel and quarter beets.
    For the dressing, whisk all the ingredients in a small bowl. Season.
    Place the beets, bean sprouts, carrot, celery, onion and mint in a large serving bowl. Drizzle with dressing and toss gently to combine.
