Grilled Shrimp With Chili Dressing - cooking recipe

Ingredients
    None None For the Chili Dressing
    1 None long red chili, seeded, very finely chopped
    1 None long green chili, seeded, very finely chopped
    1 None lime, juiced
    2 tsp fish sauce
    1 tsp sugar
    None None For the Shrimp
    3 1/3 lbs tiger shrimp, peeled, deveined, tails intact
    2 tsp neutral oil
    None None Cilantro sprigs, to serve
    None None Lime wedges, to serve
    None None Steamed rice, to serve
Preparation
    To make the chili dressing, combine the chilis, lime juice, fish sauce, and sugar in a small bowl. Stir until the sugar dissolves. Set aside.
    Cut down the center back of the shrimp without cutting right through and flatten out to form a butterfly shape. Place on a baking sheet and brush with oil. Season.
    Heat a broiler, grill pan, or outdoor grill to high. Cook the shrimp for 2-3 mins, turning halfway through the cooking time and brushing with the dressing, until lightly charred and pink. Set aside to rest for 2 mins, keeping warm.
    Drizzle with the remaining chili dressing, sprinkle with cilantro, and serve with lime wedges and steamed rice.
