Ham And Pea Patties With Mustard-Mayonnaise - cooking recipe

1 lb mashed potatoes
2 thick slices ham, finely chopped
3.5 oz frozen peas, thawed
1/2 cup all-purpose flour
3/4 cup dried breadcrumbs
1/4 cup vegetable or olive oil
2 None mini cucumbers, sliced into long thin ribbons
4 oz baby spinach
1/3 cup mayonnaise
3 tsp whole grain mustard
Preparation

Combine mashed potatoes, ham, peas and flour. Season. Using damp hands, shape mixture into 12 patties. Coat in breadcrumbs. Heat 2 tbsp oil in a large frying pan over medium-high heat. Cook patties, in batches, for 2-3 mins per side, or until golden brown. Drain on paper towels.
Combine cucumber and spinach then transfer to serving plates. Arrange patties on top. Combine mayonnaise and mustard and serve on the side.
