Pumpkin Fruit Cake - cooking recipe

Ingredients
    1 cup butter, softened
    1 cup granulated sugar
    2 None eggs, at room temperature
    1 tsp vanilla extract
    1/2 lb mashed pumpkin
    2 1/4 cups self-rising flour, sifted
    2 1/4 lb mixed dried fruit
Preparation
    Preheat oven to 325\u00b0F. Grease and line an 8 inch round cake pan with parchment paper.
    Cream butter and sugar until light and fluffy. Add eggs and vanilla and beat until combined. Fold in pumpkin then flour and dried fruit. Transfer to prepared pan and bake for 2 hours, or until a skewer inserted in the center comes out clean. Cover with foil and let cool in pan.
