Ingredients

1 lb Granny Smith apples, peeled, cored, finely chopped
2 1/4 lb fresh figs, coarsely chopped
1/2 cup orange juice
5 1/2 cups granulated sugar
2 tbsp orange zest
3 None star anise
1 None cinnamon stick, halved
2 None vanilla beans, halved lengthwise
Preparation

Bring apples and 2 cups water to a boil. Reduce heat and simmer, covered, for 20 mins, or until apples are soft. Add figs and orange juice. Simmer, covered, for 10 mins.
Weigh fruit mixture. Measure out 6 oz sugar (around 3/4 cup) for each 9 oz mixture (around 1 cup). Return mixture and sugar to pan along with remaining ingredients. Stir over low heat until sugar dissolves. Increase heat and boil for 45 mins, or until jam jells when a drop is placed on a frozen plate.
