Honey Hoisin Chicken - cooking recipe

Ingredients
    4 None boneless skinless chicken breasts, trimmed
    1/4 cup hoisin sauce
    2 tsp light soy sauce
    2 tbsp honey
    1 tsp sesame oil
    2 cloves garlic, crushed
    2 tsp grated fresh ginger
    4 None baby potatoes
    2 tbsp butter
    2 tbsp vegetable oil
    10 oz baby green beans, trimmed
    None None Lemon wedges, to serve
Preparation
    Using a sharp knife, score the chicken at 1-inch intervals. Combine the sauces, honey, sesame oil, garlic and ginger in a medium glass bowl. Add the chicken and toss to coat. Cover with plastic wrap and refrigerate for 30 mins (longer if time permits).
    Preheat the oven to 350\u00b0F. Line a baking pan with parchment paper, extending the paper over the sides to prevent the sauce running. Place the chicken, cut-side up, on the prepared pan. Brush with the marinade. Bake, basting occasionally with the marinade, for 20 mins or until the chicken is cooked through.
    Cut the potatoes into very thin slices. Melt the butter with the oil in a large skillet on medium heat. Add the potato and cook, turning, for 10-12 mins or until golden and crisp. Drain on paper towels.
    Cook the beans in a medium saucepan of boiling water tor 3-4 mins or until just tender. Drain.
    Arrange the chicken, potato and green beans on plates. Serve with lemon wedges.
