Smoked Trout Salad - cooking recipe

Ingredients
    4 oz rice vermicelli
    2 oz sliced smoked trout
    1 small cucumber, cut into matchsticks
    1 small carrot, cut into matchsticks
    6 small radish, trimmed and thinly sliced
    1/2 cup mint leaves
    1/2 cup cilantro leaves
    None None Ground peanuts, to serve
    None None FOR THE DRESSING
    1/2 cup lime or lemon juice
    1 tbsp brown sugar
    1 tbsp fish sauce
    2 tsp sesame oil
    2 tsp sambal oelek (Indonesian ground chili paste)
Preparation
    Break vermicelli into a large heatproof bowl. Cover with boiling water. Set aside for 5 mins until tender. Drain well. Place in a serving bowl to cool.
    For the dressing, whisk all ingredients in a small bowl. Set aside.
    Add trout, cucumber, carrot, radish and herbs to noodles. Drizzle with dressing; toss to combine. Sprinkle with nuts to serve.
