Orange And Date Couscous Salad - cooking recipe
Ingredients

1 cup couscous
2 medium oranges
2 oz baby spinach leaves
1/2 None red onion, sliced thinly
1/2 cup seeded fresh dates, sliced thinly
1 tbsp olive oil
Preparation

Combine couscous with 1 cup boiling water in medium heatproof bowl; cover. Let stand about 5 mins or until water is absorbed. Transfer to a large bowl. Fluff with fork to separate grains. Cool slightly.
Meanwhile, coarsely grate peel from both oranges. Segment oranges over small bowl, reserve any juice in bowl. (You will need 1/4 cup orange juice.)
Stir orange segments, reserved juice and remaining ingredients into couscous.
