Beef And Ginger Stir Fry - cooking recipe

Ingredients
    1 tbsp olive oil
    1 lb ground beef
    1/3 lb oyster mushrooms, quartered
    1 None carrot, peeled and cut into matchsticks
    2 None sping onions, trimmed and sliced diagonally
    2/3 inch ginger, peeled and finely chopped
    1 stalk lemongrass, outer leaves removed, bashed and chopped
    1 - 8 oz can bamboo shoots in water, drained, liquid reserved
    1 2/3 cups vegetable stock
    6 tbsp soy sauce
    1 tbsp cornstarch, mixed to a paste with 2 tbsp water
    None None basmati rice, to serve
Preparation
    Heat oil in a large wok or frying pan, add ground beef and stir-fry for 6-8 mins until browned and cooked through, stirring occasionally. Remove with a slotted spoon and set aside. Add mushrooms, carrot, spring onions, ginger, lemongrass and bamboo shoots and stir-fry for 5-7 mins. Add stock, reserved bamboo liquid, soy sauce and cornstarch slurry. Return ground beef to the pan and simmer for 3-4 mins. Season to taste and serve with basmati rice.
