Fava Bean Purée With Sautéed Shrimp - cooking recipe

14 oz peeled fresh or frozen fava beans
1 None medium potato, peeled, diced
1 None onion, chopped
2 cups chicken stock
3 tbsp mint leaves
12 None raw jumbo shrimp, peeled, deveined, tails left intact
12 slices pancetta
Preparation

Combine fava beans, potato, onion, chicken stock and 2 cups water in a heavy-bottomed saucepan. Bring to a boil. Reduce heat to low and simmer for 12-15 mins, or until potato is tender. Strain, reserving liquid and a few potato pieces for garnish, if desired.
Transfer fava beans, potato and onion to a blender along with mint. Puree until smooth, adding a little reserved liquid, if necessary.
Meanwhile, preheat grill. Wrap each shrimp in pancetta. Grill for 1-2 mins per side, or until just cooked.
Divide puree between 4 serving bowls. Top each with 3 shrimp and reserved diced potato, if using. Drizzle with olive oil. Serve immediately.
