Croque Monsieur With Cucumber Salad - cooking recipe

1/4 cup white wine vinegar
1 tsp sugar
1/4 cup olive oil
1 None cucumber, diced
1 None red onion, peeled and cut into thin rings
None None FOR THE CROQUE MONSIEUR
8 None thin slices cooked ham
8 slices Gruyere or Emmental cheese
8 None thin slices white bread
2 None eggs
1/2 cup milk
2 tsp butter
Preparation

For the cucumber salad, mix the vinegar and sugar in a medium bowl. Whisk in the oil in a thin stream. Add the cucumber and onion; toss. Season with salt and pepper. Refrigerate until ready to serve.
For the croque monsieur, place 2 slices each ham and cheese on 4 slices of bread. Top with the remaining bread. Beat the eggs and milk in a shallow dish. Season with salt and pepper. Dip the sandwiches in the egg mixture to lightly coat both sides.
Melt 1 tsp of the butter in a large nonstick skillet on medium heat. Cook 2 sandwiches for 2-3 mins on each side, until golden brown. Remove and repeat with the remaining butter and sandwiches. Cut in half diagonally and serve with the cucumber salad.
