Duchess Potatoes - cooking recipe
Ingredients

4 lbs potatoes, peeled and cut into 2 inch cubes
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
6 tbsp butter, melted
1/4 cup chopped fresh chives
2 tbsp minced garlic
Preparation

Preheat oven to 400\u00b0F. Coat a 5-cup shallow baking dish with cooking spray.
In a large pot, combine potatoes and enough salted bring water to cover. Bring to a boil. Boil for 15 mins, or until tender. Drain and return to pot. Mash. Add remaining ingredients and season. Transfer 1 cup of mixture to a piping bag fitted with a star tip. Transfer remaining to prepared dish. Pipe potatoes around edge of baking dish and bake for 25-35 mins, until puffed and golden brown.
