Elderberry And Apple Cordial - cooking recipe

Ingredients
    9 lbs elderberries, destemmed
    2 1/4 lbs apples, peeled, cored and finely chopped
    5 cups sugar
Preparation
    Place elderberries in a large saucepan and mash. Add 3 cups of water and the apples. Bring to a boil and cook for 10 mins. Cover, turn off heat and leave to steep for 30 mins.
    Drain the puree in a large sieve lined with cheesecloth and collect juice in a bowl. Put juice and sugar in a saucepan and bring to a boil. Pour juice into 4 sterilized bottles (approximately 3 cups each), seal and leave to cool. Add cordial to mineral water or sparkling wine.
