Olive And Almond Couscous - cooking recipe
Ingredients

1 1/3 cups couscous
3 tbsp olive oil
3.5 oz blanched almonds
3.5 oz pitted green olives
3 tbsp cilantro, chopped
Preparation

Place the couscous and 1 tbsp olive oil in a large heatproof bowl. Pour over 2 1/2 cups boiling water, cover and leave to soak for 8-10 minutes until the grains are tender and swollen and the liquid is absorbed. Fluff up the couscous with a fork to separate the grains; set aside.
Heat the remaining olive oil in a large heavy-based frying pan. Add the almonds and cook, stirring continuously, for 3 minutes until just golden. Add the olives to the pan and cook for another 1 minute, stirring continuously.
Stir in the couscous and season to taste. Stir the mixture over heat for another 2 minutes until heated through. Stir in the cilantro and serve immediately.
