Simple Chocolate Cake - cooking recipe

3 tbsp low-fat butter spread
1 cup sugar
1 None large egg
1/2 cup self-raising flour
3 tbsp cocoa powder
1/2 cup skimmed milk
1/4 tsp baking soda
1 1/2 cups powdered sugar
1/4 tsp instant coffee powder
Preparation

Preheat oven to 350\u00b0F. Lightly spray a deep 8 inch round cake pan with oil and line base with baking paper.
In a bowl, using an electric mixer, beat spread and sugar until smooth and creamy. Add egg, beating well.
Sift flour and 2 tbsp cocoa together. Fold into creamed mixture alternately with milk, beginning and ending with the flour mixture.
Combine baking soda with 1/4 cup boiling water. Lightly fold into mixture. Pour into prepared pan.
Bake for 35-40 mins, or until a skewer inserted into center comes out clean and dry. Cool in pan for 5 mins. Transfer to a wire rack to cool completely.
In a bowl, sift powdered sugar and remaining cocoa together. In a small bowl, combine coffee and 1 tbsp boiling water. Blend into powdered sugar mixture until smooth. Spread over cold cake. Serve.
