White Chocolate And Strawberry Cheesecake - cooking recipe

6 oz graham crackers, broken
5 tbsp butter, melted
1 tbsp unflavored gelatin
2 pkg (8 oz each) cream cheese, softened
1 can (14 oz) sweetened condensed milk
1 1/4 cups heavy cream
5 oz white chocolate, melted
1 lb strawberries, halved
1/4 cup strawberry jam, warmed and strained
1 tbsp lemon juice
Preparation

Grease a 9-inch springform pan. Process graham crackers until fine crumbs form. Add butter; process until combined. Press crumb mixture evenly over bottom of prepared pan. Cover; refrigerate for 30 mins or until firm.
Sprinkle gelatin over 2 tbsp water in small heatproof bowl. Stand bowl in small saucepan of simmering water. Stir until gelatin dissolves. Cool for 5 mins.
Meanwhile, beat cheese and condensed milk in large bowl with electric mixer until smooth. Beat cream in medium bowl with electric mixer until soft peaks form.
Stir warm gelatin mixture into cheese mixture; fold in cream and chocolate. Pour cheesecake mixture into prepared pan, spreading evenly over crust. Cover; refrigerate overnight.
Arrange strawberries on top of cheesecake. Brush strawberries with combined strawberry jam and lemon juice.
